This isnt a pure 300 series question but there is some connection as people do 360 turbo conversions.
Does anyone with greenbooks know if the turbo redblock valves are sodium filled for better cooling? Do NA redblocks not have piston cooling oil jets?

All blocks (whether NA or turbo) had the squirters after a certain date. By that time they may have all been turbo anyway...I honestly can't remember. You can add them to any engine...but some in the year or so before they were fitted have the 'bumps' for the tapping, which makes life easier.
All turbo heads have always had sodium filled and coated exhaust valves. Having said that...it's not a problem to run without them. You may not get quite the same lifespan out of plain valves, but it's not worth swapping heads over. Many production turbo cars have plain valves.
