Is this symmetrical (i.e. doesn't matter which way it is fitted as longs as gasket sits over studs), i just putting new ones on and just before I put on the exhaust etc I want to make sure

No I think it only goes on one way, but it's pretty obvious once you see it.

BTW well done using the correct word so us pommies can understand Aussie word for exhaust manifold is usually extractor!
