Hey there, welcome!
I'm only new myself, but I think this discussion has been run before and the general consensus is that you might as well buy a manual 1.4. Check the offers section, there's plenty of really tidy 1.4's going for silly money...

filthyjohn and pistonpen paultje have done the conversion. Try searching their posts for details, here's one:

it can be done in 1 day, i did the conversion too.

what's different:
- gearbox + mounting brackets + mounting rubbers
- handbrake cable supports
- propshaft
- bellhousing
- complete clutch
- clutchcable
- clutchpedal
- flywheel
- gear selector
- gear selector support
- remove vacuumsystem for gearbox + clutch of the cvt and make sure this is leakfree

if you have a 340 all the mounting things to the body needed for conversion are present so no need for drilling holes etc.

And keep all the CVT parts so that someone who needs them can have use of them :D
